Apple TVWhen you first turn on iTunes match on your device, it will replace any music that you have synced from your iTunes library on your computer with the iTunes match service. After you have initially set up iTunes match and started to download tunes to your device, iTunes match will not delete them and it will leave them where they are.

Apple TVSorry, I assumed you were talking about using iTunes Match in conjunction with your iOS device. Once you activate iTunes match on your computer it will try to match as many tunes as it can and then upload the remaining tunes to the cloud, after it is finished, you can then begin to use iTunes match, it will not delete any of the tunes from your computer unless you do that manually.
