I took over my roommates computer...now what?

I have tried to read forum discussions to figure this our but am still unclear. I would like to keep all of the applications that are on her computer, as well as save all of the files (just in case), while still making it my own password, etc. I have a 1tb external hard drive with plenty of space but no original intall cd. What do I do?
