Which version of the iBook do you own?
When you say update, do you mean from 10.5 to 10.5.8 via software update or a compete update via disk from 10.4 to 10.5.8?

You seem to have enough memory and processing power to update.

There is a link on there which will take you to the standalone update installs. You could always just download the update 10.5.8 and manually install it.

Also I am not seeing where it shows you how to manually do the install

Then it should be in your download folder. When you say sitting at 5% is this during the installation processes?
I would be inclined to repair permissions on your Machintosh HD drive and try the install again.
To repair the permission follow:
Open Disk Utility, located at /Applications/Utilities/Disk Utility
Select your startup disk on the left of the Disk Utility window
Select First Aid from the tabs
Click the "Repair Disk Permissions" button

If you want to restore your iBook then you would need the system disks that came with your iBook. Could restore using a retail copy of the software but be careful of using any system disk which is not for your model of iBook. System restore disk are gray in color. Retail disks have a printed picture of an 'X' on them and are black.
