With Google, I was able to add photos, videos and information about my business to a profile. Most of our customers found us by searching on their smart phone with the Google Maps App, most of which used an iPhone. With the new iOS 6 Maps App, will our customers be able to have the same interactive expierence? Will I be able to add/edit content?

You could try contacting Apple but I wouldn't hold out any great hopes of an answer. Use the Contact Us link found at the bottom right of every page.
It has been reported that Apple are using business data from Yelp, so if Yelp allows you to edit the data, then possibly you will be able to do that through them. But, until Apple announces more details, or releases iOS 6, we just don't know at this point in time.
To edit a buisness listing, select it on the map and then choose Report a Problem
To add a buisness listing, find the the area of map where you want it and then use the Report a Problem option which is under the curl and just above the Print button
