Assuming you want to reinstall iTunes try one of these recent builds direct from Apple's secure servers:
See also Empty/corrupt iTunes library after upgrade/crash for steps to roll back to the pre upgrade version of your iTunes database if required.

Drag the application in the Applications folder to the trash and empty the trash.
I suspect there is something behind this other than a simple desire to be rid of iTunes and we might provide a better answer if we knew why you wanted to get rid of iTunes.
NOte that this still leaves all the preferences and Library folders, so if you're doing this for troubleshooting reasons you might want to check out this article on how to uninstall: http://www.macworld.com/article/1151428/itunes_uninstall.html

Not so simple anymore.
Need to first change the ownership of iTunes app.
But you are correct in asking why the OP wants to remove it.

My reason is I have Outlook 2016, and I want to be able to sync my contacts and calendar. Apparently this is no longer possible with the latest version of iTunes. So, I'm thinking if I uninstall iTunes, then reinstall the previous version, I will then be able to sync both.
Am I correct with that thought process? Are there any other easier methods to do so?
And why doesn't the new OS X have Sync Services? Maybe that is more the issue...
