Just added about 15 iPhones here at work and I need to back them up and manage them wirelessly. Will MAC Server do that? I was thinking about using a MAC Mini for it with MAC Server. Is the management software part of MAC Server?

You might also check out the iOS 5 education deployment guide. There are a lot of great ideas in it, even though it's focus is more on educational environments. These ideas could be used in a smaller environment like the one you have described.
