I like to view my music in the 'Album' view, but when I click on my iPhone in iTunes, I can only see the List view of all the songs- and I would rather view it in Album view. Is there anyway to do this? Perhaps a terminal command?

If you're referring to how you view the contents of your iPhone while it is connected to iTunes, with the contents in view you can select between various viewing formats (see the buttons to the left of the "Search" field at the top-right corner of iTunes. These let you switch between list view, album, coverflow, etc.

Thats exactly what I'm talking about, All the options are greyed out except for list view.
Even when I go under my music on my iphone, its greyed out, and the view drop down menu is greyed out on the list view as well.
These buttons may only work if you're manually managing music and video. Do you manually manage your iPhone, or auto-sync your music to it?
If they're also not working for your entire iTunes library, then it could be problem with your iTunes installation (maybe remove, reboot, and re-install).
I'm manually managing my music.

Probably nothing you can do then ... did it used to work? (I don't manually manage, nor look at my iPhone contents this way) Perhaps an iOS and/or iTunes update changed something.
It's always not worked- but my itunes library was small enough to deal with it.
I found a workaround however:
