It's pretty simple. If you have backed up your iPod, simply plug it to iTunes, if the sync starts, cancel it.
Now, when your iPod appears in the devices section on the sidebar, jus right click on it and click on restore from backup. It will now show you the most recent backup along with the date and time of the backup taken. It takes around few minutes and you now have the backup restored.
But make sure that the music, videos, apps will be synced back as it was restored/updated.

The iPod backup that iTunes makes normally and as the first step of an update does not included synced media like apps and music. See:
If the synced media is not in the iTunes library it can't be restored/synced back to the iPod during a latter part of the update.
