I'm trying to transfer a pages document to my iPad and seem to have failed miserably, I thought I would just sync, but I have obviously missed out doing something vital.

Assuming that you are trying to sync it to the Pages app on the iPad then see this page.
Syncing in and of itself does not transfer the files. Use file sharing. Basically you drag the documents into the file sharing window of iTunes when the iPad is connected to your Mac, with iTunes running, the iPad selected and Pages selected in if the list of file sharing apps.
