To solve your problem, you will need to plot two columns that are complementary, such as "Incomplete" and "Complete".

I'm sorry, but I don't know what you mean by Quantity and Completion, so I can't but my suggestion in relative terms.
Let's say that you have a requirement to produce 100 pieces. That might be in a column called Quantity Reqiured.
Let's also say that you have a column called Number of pieces Completed. Those may indeed be your Quantity and Completion columns, but I'm not sure. You would also need a column titled something like Uncompleted Production Reuirement, which would be Quantity Required minus Number of Pieces Completed. Then you would make a pie chart that took it's data from the columns Number of Pieces Completed and Uncompleted Production Requirement. Since the total production requirement never changes, it has no place in the pie chart.

How can you hid columns or rows from being printed?

Columns may be hidden one at a time by hovering over the column label and clicking the control button that appears, selecting Hide.
You may also select a number of columns and then hover over any one of them and make the same choice, or use the Table menu.
