Green vs. Blue

I have noticed that certain people I text using the iphone messages are blue and others are green. It is even with people that have iPhones! So I did a little research and discovered that if I send a message to certain people using their telephone number the text is green, however if I switch to their email address it is blue.

I further checked my phone and went to Settings>Messages>Receive At it shows my email address. That may be fine, but I went to change to receive my messages from my email to my phone number I couldn't. In fact the phone number was listed as an error (the number is correct but grey'd out).

Suggestions?

A further definition:

Blue texts are iMessages, which are done through Apple servers and are free for unlimited amounts.

Green text messages go through your carrier and count against your data plan.

iMessages can be sent to users of an iPod touch, iPhone, iPad or Mac running Lion and Mountain Lion.

Anyway, under Settings > Messages > Receive At..., yes, the number is grayed out. But under that menu, if you tap Caller ID, you should be able to select the number.
