At times I would like to gather all files of a certain extension (aif or jpg or xlsx or…) in one location. By adding the extension parameter to the finder's FIND command, I can easily see them all, but that's only the first half. How do I now move, or copy them all into a single folder, say, on the desktop? Thanks.

After you use the search function to find all the files you want, you can just drag them from the search window to the desktop. Alternatively, you can use automator to create a folder action if you want all of those file types to be immediately moved to the desktop whenever those types are detected in the folder
Use Automator. Create an app as I did in the example below. When you click on it it will ask you what extensions, type it in and then it will allow you to name a new foler on your desktop. If you want to copy then just put in Copy Finder Items before the New Folder action.
