Idk if this will make sense or not, but on youtube videos i saw that when people hooked up their laptop to their apple cinema display's, their dock was on the apple cinema display and the empty wallpaper was on their laptop. How do you do this?

The screen with the menu bar defines the "main monitor". You can define any connected monitor you want as the main montor.
Open Displays system preferences. Click Arrangement. You will see a diagram representing both displays and their spatial relationship. Just drag the little white menu to the the other monitor in the diagram. Now it becomes the main montior.
