There are some hacks to 'control' your fans, such as smcFanControl but you must use them at your own risk and realize that any problems that may occur might void your warranty (if you're still under warranty).

Your Mac runs very hot for a reason - and you should tackle that problem first, probably by looking at Activity Monitor and seeing what's consuming your CPU activity. You can use a widget such as iStat Pro to see how fast your fans are running and to check the temperature of your built-in sensors.

Your Mac is designed to run at specified temps and your fans to cool off those temps accordingly. Before I messed with any fan control utilities, I'd find out what's really going on under the hood.

But if you want to do it yourself, do so at your own risk.

Both my MBP and iMac 27" seemed to run very hot i.e. the casing was too hot too hot to touch. The bodies act as heat sinks so it is quite normal for them to get hot. If they 'overheat' they will shut themselves down to prevent damage.

I use iStatPro to keep an eye on temps and fan speed, although i let the computer control the fans accordingly. Under heavy processer use my iMac CPU temp gets up to 75c and the CPU temp on my MBP can get as high as 85c, iStatPro shows the fans up to 5000rpm at these temps and they soon come down.
