Hi, I have an iPad 2 and would like to extend my applecare warranty. Is this available to Malta as it seems that the online store doesn't accept my country.

You buy AppleCare at the time of purchase.
It is for 2 years of coverage.
There is no extending it-either you bought at purchase or you didn't.
At least in the USA you can purchase the standard AppleCare extended warranty within one year of purchase. That also mean when the original warranty is still in effect.

You might want to refresh your understanding of Apple Care. Most of what you have posted is not true.
