I have opened my gmail account on my iphone, and my contacts are there... but there are no email addresses.

I would sync it with itunes and link to your gmail from there under the info section, rather than having the contacts sync when adding a gmail account.
This way the email addresses should be included.
That sounds easy, but I don't know how to do it. I rarely use itunes.
Connect your phone
open itunes
on the left under devices click on your phone
when that information pops up click on INFO at the top and check on Sync Contacts
Select Google from that drop down enter your email address and password for gmail.
then sync.
