Download new fonts from the Internet (e.g. 1001fonts.com), and then open the file once downloaded. This will launch the application FontBook. It will ask "Install the font?" Click "OK", and you will be able to use the new font in Pages, TextEdit or other word processors. (You may have to re-start the application for it to recognize it.)
ℹ Bonus info: pressing command–t in many applications opens you computer's font control panel.

Have you looked carefully in Format > Fonts > Show Fonts, making sure the Collections is set to All Fonts?
If you added free fonts, sometimes they have names that differ from what you expect.

You don't add fonts to apps, you add them to the OS. Just double click on your font and click on the Install Font button.
