No, you don't need to do anything.

If you don't use Java applets regularly, it's a reasonable precaution to turn Java off in your web browser (in Safari, it's in the Security preferences). But it's not a big worry as long as you have Apple's latest security updates; certainly uninstalling Java would be unnecessary, in my opinion.
