I converted to Lion because Mobile Me was ending. I thought I had found all my issues - Quicken, Quickbooks and my ancient Christmas Card list on Appleworks. Nope - 1 more! I don't want to spend any more on this transition! Is there any way to print to my printer with a generic driver if neither Apple nor HP list it as supported in Lion :-(

No, not if a driver is not available from the manfacturer. It is the manfacturers responsibility to release updated drivers. If they don't you are out of luck and need to get a printer that supports Lion.
The HPIJS open source drivers will support your printer. You can get the software on the OpenPrinting.org site. Unfortunately, that software only supports the printing function.

I still will need a new printer if I want to scan but I can take my time figuring out which to buy and let the sw/computer equipment budget recover.
I am glad we could solve part of your problem. There are open source drivers for many printers. None of them are supporting the scanning function, so this may be a never ending cycle if you get another all in one device. You may want to consider getting a cheap scanner to go along with the printer depending on available space and budget.
