i am thinking of upgrading my current RAM (4GB) on my late 2011 MBP, to 8GB. I would also like to install a SSD aswell. Does this effect the warranty for my laptop. I have the extended apple care warranty for 3 years.

Not at all... Providing the RAM is Installed Correctly and no accidental damage is caused.
Memory and storage are user upgradable items and do not affect the warranty unless you break something in the process.
Use care, look at the online videos at places like OWC, and make sure you don't move around during the installation and create static electricity.
