It appears that Apple Notes is not supported by Entourage.

Does anyone know of a way to sync my iPhone Notes to my iMac desktop Entourage?

IMac, Mac OS X (10.6.4), Iphones & ITouch

You will Note (ha ha) that the Note box is not checked on that Sync help page. It says sync with Mobile Me. I have run it with the box checked and unchecked, I have changed the settings to enable/disable on ITunes several times to no avail.
