There is one and only one official way to speak to Apple about Aperture. The link is built into Aperture at "Aperture➞Provide Aperture Feedback".
This forum is simply users helping users. Apple's official stance is that it does not read these forums.
Searching the forum, you may find a work-around that involves replacing some of the files Aperture uses to render the UI. This works, but
- is a hack, and hacks can have unintended consequences, and
- you are likely to have to redo the changes with each upgrade to Aperture.
Sorry for all the bad news .
Lastly, IME, the shock of the change is the only bad part. Once I got used to the new "all gray" look, I found it to be an improvement. The old look now seems a bit Disney to me. Specifically, the old look colors now seem an unwanted distraction (I have no trouble hitting my targets now that my brain has adjusted), where once they seems a helpful aid. Work with it for a while -- you may be pleasantly surprised.
