iTunes does not store contacts. Contacts are included with your iPhone's backup along with a significant amount of other data, which is updated by iTunes as the first step during the iTunes sync process. The backup is in a SQLite database format which is not directly accessible.
iTunes also serves as the sync conduit for syncing contacts with a supported address book app on your computer. This is selected under the Info tab for your iPhone sync preferences with iTunes.

I wouldn't depend on the iPhone's backup alone for this data since the backup includes a significant amount of other data.
Contacts are designed to be synced with a supported address book app on your computer where your contacts should be with or without an iPhone or any cell phone which can be lost or stolen or damaged beyond repair.
With Windoze, this can be with Outlook 2003, 2007, or 2010 along with syncing calendar events, notes, and reminders, or with the address book app used by Outlook Express and by Windows Mail called Windows Contacts. With a Mac this can be with the Address Book app.
If the supported address book app on your computer is empty - no contacts, before the first sync for this data enter one contact in the address book app on your computer. This will provide a merge prompt with the first sync for this data which you want to select. Syncing contacts with a supported address book app on your computer is selected under the Info tab for your iPhone sync preferences with iTunes.
In addition, a number of free email accounts support syncing contacts over the air such as with an Apple iCloud account, a Yahoo account, a Gmail account, and a Hotmail account.
Do you run on windows or a mac?
in iTunes, there is an INFO tab under the iPhone screen.
Youcan choose whether to sync Calendars and Contacts - it should have prompted you to choose whether to sync it locally witho your computer.
This differs based upon what operating system you use.
If you have a Mac, it shouul have synced it to your iCal and Contacts (used to be called AddressBook) apps
Hi,
I'm trying to ensure that my contacts are properly backed up before I restore my old iphone 4 and give to my daughter. I have 'backed up' my iphone in itunes. But when I look to where the contacts are supposed to be stored:
/Library/Application Support/MobileSync/Backup/
the mobilesync is not in the application support folder?
