    On a shuffle, "all songs" is the name of the main playlist with all of the songs.  If you press and hold the VoiceOver button, it might say "all songs" (plus the list of any other playlists you have on the shuffle). 

     

    So make sure you are just pressing (and releasing) the button, not pressing and holding it down.
