For instance, what if I only want to copy/restore movies and music from the user account, but not the actual account and all its settings? Is this possible, or does the copy/restore restore the actual user account and all its specific settings (password, domain information, etc.)?

I have only used migration assistant to move everything. I do not know if you can selectively move information.

Migration Assistant copies everthing in the entire user account and makes a duplicate user account on the target machine. It doesn't combine a user account's files on the source machine with a separate account's files on the target machine, nor can it be used to selectively copy files. Copy the files manually if you want to do that.
Using the migration assistant, does the user info and configuration copy to the new system exactly?
