i don'r wish to run osx server just osx lion. how do i remove the server software?

I can only recommend buying the software again, which would be a bit of a dumb move, due to 10.8 coming out any day now. The software shouldn't affect the computer though so hang in there for a little longer
One possibility is to obtain the DMG for OS X Lion, boot from it and reinstall the client version.
In my past experience, you'll keep the OS X Lion Server recovery partition, but you will most definitely be running OS X Lion without the server software deployed.
(I'm not sure if you can uninstall the Server software from a Mac Mini Server -- this appears to be integrated with the OS)
Why not simply turn off all the services in the server app?
I am using a Mac Mini Server as a workstation and the first
time starting it out of the box I simply answered no to any
server related questions during initial set up.
I have been working with it without issue and have been meeting
or slightly beating the Geekbench scores for a Mini Server without
Server services running.
