Bought new I pad 2 how do I take iTunes off of iPad 1

Bought new IPad2 gave old IPad 1 to granddaughter how do I get my iTunes account off of IPad 1

iPad 2, iOS 5.1.1

I you want to clear the device completely fo her - sign out of your iTunes account and then go to Settings, General, Reset (scroll down), Erase all content and Settings.
