I have dvds that I would like to format on my imac so that they can be loaded on to itunes and synced over to my Ipad. When I load a non encrypted dvd onto by iMac it automatically runs. I can stop it and view the video file, but that file is greyed out and cannot be imported into my dvd converter software. Also, is there a better converter to use than the Any Video Converter I downloaded from the ap store?

For unencrpypted DVDs, the most recommended software on the forums seems to be Handbrake.
As those DVD's are unencrypted, I'm also free to give you advice: MakeMKV. For handling DVD sources, while the previously-recommended HandBrake is very good, MakeMKV is even better if you do want to keep all the goodies like subtitles. (If you don't need subs, go for HandBrake and don't bother with MakeMKV, though.)

Handbrake does subtitles just fine.
No need to lie to push junk pay for software.
I stand corrected: yes, HandBrake is indeed able to include (nonstandard) VobSub subs in the target MP4 files. (Of course, as VobSub subs in MP4's are non-standard, iTunes / QuickTime won't show them.) Sorry for the mistake: I've mistaken HandBrake's DVB TS subtitle handling for those of DVD's.
BTW,
1, MakeMKV is free and definitely not commercial.
2, no need to be rude and call others liars. You wouldn't like to be called a liar if you make a mistake (particularly if you recommend a free app like MakeMKV), would you?
(Funny, there was another gerilla marketer posting a link to the same cr@ppy converter also offered by Enolsoft, Aneesoft and a lot other sleazy developers also bombarding this forum with the ads of their video converters. Now, they're the gerilla marketers (you can also call them liars), not someone that recommends free apps.)
I third the handbrake recommendation.. Works very well. Mpegstreamclip is also another good and free video converter.
I've used both to make m4v files for my iPad and Touch. One good thing about handbrake is if you have a dvd (non-encrypted of course) that has many files on it, you can queue the different movies, let it run while you're at work or overnight. Handbrake also has presets to optimize the files for idevices.

I don't know anything about that. I'm a paid user of the software - works fine.
Unlike most forums that support the concept of free speech, the Apple world protects people from information that they might not be mature enough to handle. Hence the posting was deleted.
I recommend you could try Any Video Converter Ultimate for Mac, it could convert or rip DVD movies for iPad, iPhone devices.
