If you are referring to your @me.com aliases, and you had more than three aliases, then I believe that only three will transfer since only three are allowed according to the iCloud mail accounts preference settings (see screenshot below).

I did a bit more reading in Apple's knowledge base. I think you'll need to contact the MobileMe support team to ask them how you get your other email addresses back.

The article below indicates that the aliases should have moved when you transitioned to iCloud, but doesn't explain how more than three aliases are supported.

Mail

When you move from MobileMe to iCloud, your active email addresses (@me.com, @mac.com, and all your aliases) move with you, along with all of your messages, mailboxes, and rules.

This article provides additional support that your aliases should have moved to your new iCloud account.

iCloud users can create up to three email aliases for use with their account.

Notes:

  • If you moved your MobileMe account into an iCloud account and you had greater then three email aliases, you can keep all of your existing email aliases in your iCloud account until you delete an alias. If your total number of email aliases in iCloud is more than three and you delete an alias, you will not be able to create a new alias to replace the deleted alias.
  • Aliases are not transferable. Only the iCloud account that created the alias can use the alias.
  • Once you create an alias it cannot be made into its own account.
