why are some texts blue, some green?

Some times my messages from iPhone to iPhone and iPhone to iPod come up green and "delivered" is under the message. Other times it is green and says "sent as text message". This happens in the same conversation, one time it is blue, other times it is green. Why?

iPhone 4, iOS 5.1.1

Note: On iPhone, if iMessage is unavailable, the message may be sent as SMS or MMS, depending on content. Carrier messaging rates may apply. You can turn this on or off in iPhone at Settings > Messages > Send As SMS. Messages sent using iMessage will appear in a light blue bubble, while messages sent using SMS or MMS will appear in a green bubble.

Texts in a green balloon are SMS, while those in a blue one are iMessage. Both parties have to be be on iOS 5 to use it. However, they also have to have an active data connection for it to work. It is possible that one of you may lose a connection and the message will go through as an SMS. One way to prevent this is to turn off, Send as SMS in the iMessage settings.
