How do I change the administrator of my iPAD? When I try to update my Apps, It lists my son''s email address so I am not able to make any updates.

Settings>Store>Apple ID. Tap your sons ID and sign out. sign in with yours.
If he purchased apps on your iPad with his ID, they can only be updated from now on by using his ID.

I do not know how to sign out of my son's ID and replace it with mine. How do I get to SettingsStore>Apple ID? Is this the same as selecting SETTINGS (app on desktop), then selecting STORE (on left column). If it is, my Apple ID already indicates my correct ID.
If you are trying to update apps that were downloaded with your son's iTunes account, you must use your son's iTunes account and password. All apps, all paid and free apps include DRM protection which is tied to the iTunes account that was use to download the apps.
