Finally i decided for a clean OS X Server installation, so now i have a new OD with new users that are receiving and sending mails.
I've got a copy of the old (Lion Server) /Library/Server/Mail/Data/mail/ directory.
I know that is possible to copy old mail from old users to new one, but now the big question is: how?
Could someone help me finding a good procedure to make that copy without permission problems?

Using Terminal to copy&rename to new UID, 'cur'(and new if something in) folder and chown to assign the proper rights.

Yes, i did it.
- first i need to find inside old and new users folders the name of the user
- after i started the copy to new folder (and sub-folders)
- last from terminal i chown -R _dovecot:mail all copied folders
