Can I take books I have purchased and stored on my ipad and save them to another computer?

You can by authorizing the other computer with your iTunes account with iTunes.
I did that. I see the app in my itunes account on my PC. How do I move the books off and over?
With your iPad connected and without syncing, at the iTunes menu bar go to File and select Transfer Purchases From - the name of your iPad. This will copy all iTunes content on your iPad that was purchased/downloaded from the iTunes store.
If you want to have the iBooks only, you can re-download the books only with iTunes on the new or different computer.
