I was expecting to see an option to add my phone number in the messaging preferences... am I missing something obvious?!

Hmmm, the way it is presented suggests it is available.
I'm able to send messages between ipads and iphones, set-up with email IDs but just don't seem to be able to send or receive in anyway on the Mac!?!
WIll persevere once I have an assignment submitted and more available time - as so far I can't see that I've gained anything on the upgrade other than easy searchin in Safari and option to dictate....

Can understand your "confusion", I think many are still consfused, sometimes me too.
At this point:

That is why, if somehow, you set your Caller ID to a phone number on your iPhone, and you iMessage and someone replies back (all in blue bubble) your other iOS devices and Macs may not sync or even pick up the messages.
That is why for me, I set my iPhone's Caller ID to my Apple ID, so that when I iMessages, all my devices and macs will sync up.
The only problem if the person you iMessage to, is the first time, and he/she have not stored your previous contact in their iPhones, that would normally contain a phone number as well, then your Apple ID would appear and may "confuse" them initially.
Hope I have not confuse you further. :-)
But I think all these may be solve when iOS6 comes out, suppose to unify both phone number and Apple ID
