How to disable Mountain Lion Server?

There is no "Dedicate system resources to server services" in Mountain Lion Server.....

Replying to my own query (in case someone runs into it!). After several attempts, I deleted the Server app in the Applications folder. That worked. This is clearly not intuitive (like Apple is known for, very well), it also seems to be a flaw that when you delete something in the Launchpad in the normal way, it should not reappear, esp. without giving any reason for it to the end user - this isn't Windows!
