Accessing app data from iCloud?

I've had my iPad backing up to the cloud for months.

I had to reset the iPad yesterday, and for a couple of apps (Noteshelf and iThoughtsHD) I didn't think the operation through and made no attempt to extract my data - which is now no longer on the iPad.

But the iPad has been regularly backed up to iCloud - so it must be out there somewhere!

Is there anyway to get access to it?

iPad 2, iOS 5.1.1
