I have change it to "AAC Encoder" under the Import setting but I'm still unable to convert the song to AAC version. When I go to Advanced, the "Create AAC Version" is grey out, why is that so?

What is the file you are starting with? If the file you are trying to convert is a "Protected AAC" file, then conversion is not allowed.
Have you first selected the songs?
