Inverting phase is easily accomplished with the Gain plugin, but how does one invert the polarity of a track? Is there a third party plugin that will allow you to do it?

The gain plug is inverting the polarity, it's just misnamed. Google 'polarity vs phase' to find articles explaining the difference & how the terms have come to be used interchangably, even if it's technically incorrect to do so. Logic's Sample Delay plug-in would be something that you could use to make adustments to phase, but you have to use your ears & not your eyes. If you want to use your eyes, good ol' zoom always works.
