How to add and remove a folder in Itunes 10?

How to put videos I have in Itunes onto the Ipod nano & ipod touch?  Synching doesn’t do it for me.  I can synch music, but not videos.

Why aren’t pictures I have on my Ipod listed in Itunes under the “pictures” play list or any other play list?

I have both an ipod Nano as well as an Ipod Touch

I'm also running Win 7 & have ITunes 10 if that helps.
