I used to be able to right click on the email in the From section of an incoming email, then choose "Reply to Sender". This was perfect for email user groups, such as Yahoo, so that my reply would only go to the sender and not to the entire group. Ever since installing Mountain Lion/Upgrading to Mail 6.0, this option is no longer available. I don't understand why a perfectly great feature would be removed.

Looks like that option is not called New Email.
Choosing it will open a new email addressed to the recipient of your choice.

I tried that but the new message is blank - it does not include any of the previous thread. The previous feature would include the entire contents of the previous email.
When I use the right click I get "reply" and "reply all" options, if I use reply it only goes to the sender.
Additional you can costumize your Mail toolbar. Use the right click over the toolbar and you can activate the "reply to sender" icon.
I just use the Reply button in the toolbar? It's the one with the single arrow pointing left, and not the one with two arrows pointing left.
How about this.
Select the recipient you want to reply to (highlight in blue) then click the reply button in the tool bar.

Using any of the Reply arrows will reply to the user group, not the original sender of the email.
Ok, Matt, this is better, but not an elegant solution. The previous feature was much more logical. Thanks for at least finding a workaround.

@CJ: I agree, this is a very useful feature and its disappeance is a mistake. @Matt: this workaround does not work for me. Reply To All used to be a workaround, wherein you would then delete the group address, but that doesn't work any more either.
For now, i am reduced to replying and then dragging and dropping the sender name into the To field, then deleting the group address.
I'm with you - I used this feature ALL THE TIME in an earlier version of Mail. I'm annoyed that there doesn't even seem to be a workaround (no "reply to sender" option in the customizable toolbar, and Matt's workaround doesn't work for me). Has anyone found a working workaround or plugin to include this feature?
I'm using Mail 6.5 on OS X 10.8.4.
Here's how to do it: in the headers, click the sender. Then command-R. A new reply will open up to the highlighted recipient.
That doesn't work, at least in Mail 6.6 on OS 10.8. Haven't tried it in 10.9 yet. Any way, Command-R is the same thing as clicking the Reply button.
Ack, i am mistaken, sorry. I believed that the e-mail I tried this on had a reply-to override, but it did not.
Sigh. I'm just discovering this problem now. (Because I never upgraded from Lion until now, and I went all the way to El Capitan in one leap.) Yes, what on earth could they have been thinking? Nearly two years later and I see no improvement.
However, I did find a workaround:
Reply All replies only to the group. BUT if you first just hit plain "Reply", and then inside the compose reply window, hit the "Reply All" button, it will add the original sender. And then you have to delete the group address.
