How do I edit mp3 files?

I have a bunch of digital recordings of interviews that are long mp3 files. How do I edit these files and copy or cut small snippets and then piece them back together from all the longer files that contain a lot of stuff I don't want to use? I don't even know where to begin. The software that came with the Sony digital recorder is for Windows.

Power Mac G5 (June 2004), Mac OS X (10.5.8)

You will need to oen them in an audio editor and then recompress them to MP3 afterwards.

Audacity is free though I've always found it a bit clunky: http://audacity.sourceforge.net/download/mac/

or either version of Amadeus: http://www.hairersoft.com/ (I'm not sure whether the Lite version will run on PPC).

Audacity may not save as MP3 without an add-on - you can save as AIFF and convert in iTunes.
