You can't. If you click on it, you can see the time remaining, but you can't change the static display.
Search the forums, look at the links to your right under, "More Like This." It's been covered to death.
There are third party applications you can use for now if seeing Time Remaining on the menu bar is absolutely crucial to you. Just do a quick google search and you'll find some. As for a built-in one, you'll have to wait and hope they bring it back in a future software update.

To show the amount of time until your battery is fully charged or discharged, click the battery icon in the menu bar and choose Show > Time.
If your Mac is plugged into an electrical outlet, the menu bar shows the amount of time until your battery is fully charged. Otherwise, it shows the amount of time until it’s fully discharged

The ability to show "Time Remaining" was removed in Mountain Lion. You can only display percent.
