I'm trying to record audio from my headset mic, it connects through the Audio In port, but none of the capture software I have tried recognise the mic as being connected, even though it is plugged in.
Can anyone suggest anything to help?

Not even Skype will recognise it.
The Audio input port is Line Level and it will not pickup the week signal from an un-amplified Microphone or Guitar Pickup.
The only solution for that mic is to boost the signal up to Line Level using either a pre-amp, a stereo receiver, a Griffin iMic or a MXL iBooster Guitar and Microphone Interface.

Other solutions are, (Mac compatible) USB or Bluetooth Headsets.
Would that be easier than buying a booster?
Depends more on what you want to spend.
You might find a compatible USB Logitech Headset for about the same price as the Griffin or MXL.
A Google Search for (Mac compatible) USB or Bluetooth Headsets turned up a lot of good choices.
