I have two Apple ID's how do I delete one of them, it keeps interfering with the Apple Store

You can't currently delete accounts, all you can do is stop using it - but if you have any content from that account then it will remain tied to that account, you can't currently move or transfer content from one account to another.

But how do I keep this ID from displaying when I try to update or purchase an app from the Apple Store. I don't see a place where I can change the sign in ID.
You can log out of the currently logged in account on the iPhone by tapping on your id in Settings > Store and then log in with a different account - but only the account that originally downloaded/bought an app will be able to download updates to it.
