difference between layout and word processing templates
what is the difference between these modes? are there different commands available? can i mix the templates?

The difference is that word processing documents have a base text layer that you can type or paste text into & new pages will be created as needed. Page layout does not have this text layer & everything is placed as separate objects. Each page must be inserted manually from the toolbar or Insert menu & each page is a separate section.
"Mixing" templates would be done using word processing. Word processing can do everything page layout can & more. Page layout didn't even exist until iWork '08. Only word processing can do TOC & export to ePub.

i've been using pages to lay out a 44-page magazine-style booklet with many graphic images - 2 or 3 per page. since the pictures were so important, i picked layout mode and have got used to the ability to link text boxes; this has proved very useful if i want to stop a parpticular part of the magazine (i won't call it a "section," because this has a technical meaning in pages) on a certain page. that is, for certain parts, i don't want text to spill automatically into a new page if it runs over. i want to cut instead. so i stop this by not linking the last box in the "section."
i also found that using pages sections limited me since i could not move a page from one section to another, and i must have mistakenly gotten into text mode because i had 20 pages in a single section. had to open a new file and copy the pages one by one and piece by piece into it. edifying but something of a drag.
for a neophyte, pages is a great layout program, in that it does magic with text wrap. but like most software, it can be awfully confusing.
