But i want to use the new notes application in mountain lion to handle them.

"You can sync with the Notes app using IMAP or iCloud. Syncing Notes using iTunes is no longer supported on OS X v10.8 and later."

It's a shame that apple doesn't support a synchronization without give-away my private notes! :-/

Placing this on the cloud could constitute lack of due diligence on my part. I would like to have access to this data on my iPhone while in the field.
Apple needs to make iCloud optional functionality for ALL applications and files.
