You should be able to sync them over the cable when you sync your iPhone and Mac.
I think that the synced notes are only stored in the iPhone backup via iTunes.
But i want to use the new notes application in mountain lion to handle them.
Sadly you are correct:
"You can sync with the Notes app using IMAP or iCloud. Syncing Notes using iTunes is no longer supported on OS X v10.8 and later."
Yes, that's truely the actual working of notes application.
It's a shame that apple doesn't support a synchronization without give-away my private notes! :-/
Can a work-around be had by implementing Lion Server?
This is maddening! APPLE please fix this. I have some proprietary information that legally could place me in jeopardy if compromised. Placing this on the cloud could constitute lack of due diligence on my part. I would like to have access to this data on my iPhone while in the field.
Apple needs to make iCloud optional functionality for ALL applications and files.
