it's possible upgrade from os x snow leopard 10.6.8 server to os x Mountain Lion 10.8 server ?

Yes, but the version that is currently released is 10.8.0 not 10.8.1...you can download from the Mac App Store, check to see that your hardware meets the compatible list in http://www.apple.com/osx/specs to be sure.
