Lion users can install the current version of Java 7 by going to http://www.java.com/, but that may not solve your problem.

If you previously had Java 6 from Apple installed, then Apple has disabled it for use in Safari and has not announced any plans to update it for Lion / Mountain Lion users. You might be able to use it at your own risk, even though it's unsafe, with Firefox by following the instructions here.

If you installed Java 7 and need to switch back to Java 6 in any browser you will need to follow these instrucitions http://support.apple.com/kb/HT5559.
