I wish to use my MacBook Pro (Snow Leopard software) to take a simple circuit schematic, capture this and output a file that a prototype PCB company can generate a double sided PC board with holes drilled in. I believe that most PCB protype companies want to see a Gerber type file set.
Can anyone suggest a suitable software to do what I want using the Mac Book Pro?

Checkout DesignSpark it's free, I use it on my pc I'm not sure if they have a Mac version but it's great software and does exactly what you are looking for (make schematic and output gerber files).
There are several solutions. I prefer DesignWorks by Capilano for schematics. Osmond is inexpensive and capable for PCB layouts. I have a list of OS X schematic tools on my web site at:
